Specializing in Indonesian & Pacific Beans:
Organic, microlot, Fair trade, Co-op, Rain Forest Alliance.
I do Craft Roasting using a Fluid Bed Roaster (heated air suspension),
more precise and agile but limited batch sizes, aka 1/2 lb at a time, or ~20lbs/week.
Roasting Levels:
Some beans are best at different roasting levels.
Color and Chafe amounts also very with how they are processed.
Your choices :

Bright-Light - browned with a strong natural bean flavor 28/50
City+ A medium roast, bolder taste, hidden flavors starts to emerge 32/50
Full City - A medium to dark roast, still some seem chaff 38/50
'DARK' - Fill City without seam chaff 45/50
'X, Espresso roast without the burnt flavor. 48/50
totally burnt 50/50

Bean Defects can ruin the taste, and I don't use 'Caffeinoil' (caffeine + caster oil) to compensate for them.
